Day 2 I Pumpkin Spice Cookies by Pear Tree Diaries




Day 2 of our 12 days of Handmade Christmas is a yummy treat. We collaborated with food blogger Jasmine Pereira of the famous Pear Tree Diaries food blog to whip up a festive recipe that hits the spot. Inspired by the Pumpkin Spice Latte, she created a recipe that looks good on every dinner table (and in your tummy). We had a fantastic time shooting at her house and left only crumbs behind.



Put your baking face on, because by the end of it you’ll be beaming cheek to cheek.


Pumpkin Spice Mix Ingredients:

2 1/2 tsp. ground cinnamon

1 tsp. dry ginger powder

1 1/2 tsp. ground cloves

1 tsp. ground nutmeg



Pumpkin Spice Mix Direction: 

Stir all the ground ingredients together and store in an air tight container to retain fragrance and freshness.



Pumpkin Spice Cookies Ingredients: 

2 1/2 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

2 1/2 tsp. pumpkin spice mix

1/2 teaspoon sea salt

2 sticks or 8 ounces unsalted butter, at room temperature

2 cups granulated brown sugar (or white sugar)

2 medium eggs, at room temperature

1 teaspoon vanilla extract






Pumpkin Spice Cookies Direction: 

1. Pre-heat oven to 180°C and line baking tray with parchment paper; set aside.

2. Whisk flour, baking powder & soda, pumpkin spice mix and salt in a bowl; set aside.

3. Place melted butter and brown sugar in a bowl and beat on medium speed until fluffy, about 3-4 minutes.

4. Next, beat in egg and vanilla extract to the sugar butter mix on medium speed, and beat until incorporated, about 30 seconds.

5. With the mixer on low speed, add dry ingredients and mix until incorporated to form cookie dough.

6. Scoop pumpkin spice cookie dough on to the parchment paper into preferred shape and bake for 20 – 25 minutes until lightly brown for 180°C. And voila!



Eat as is or you can sprinkle some good ol’ powdered sugar, sometimes it’s the best friend your cookie can have. Or whip up some icing in a cone and go to merry town with Christmas patterns.




How you enjoy them, however, is entirely up to you. We suggest a good book, a latte (Ekta says these babies are great with chai too) and an evening with nothing to do but munch away your worries with these yummies.
